An antioxidant is a molecule that inhibits the oxidation of other molecules. Oxidation is a chemical reaction that transfers electrons or hydrogen from a substance to an oxidizing agent.

Oxidation reactions can produce free radicals, highly unstable molecules that can damage cell membranes and scramble the genetic information (DNA) in cells. Free radicals are produced in the body during normal cell metabolism, and at a higher rate following tissue injury or exposure to tobacco smoke, sunlight, x-rays, and other environmental influences.
